As my friend Lauren always says, "I was the perfect parent before I actually became a parent" *LOL

 

“My child will never eat sweets”, She said…

 

“My child will be totally organic”, She said…

 

Famous last words, heh?

 

Soo.. The long and short of it, the above definitely did not transpire.

Bean loves “shweets” and asks for them daily.

I completely hate it, but what can I do?

Fight her off until we’re both blue in the face and pissed off to a point where my husband calls child protection services?? (That's saved as "Mom" on his phone book )

Hmm.. No thanks, I’d rather die (seriously the tantrums are HECTIC, god help me for the looming 'Three-nager' stage).

Having said that, I NEVER admit defeat (I'm a Leo) so I’m currently trying this thing called ‘substitution’.

 

Truthfully, substitution has pretty much failed to date…(the little bugger is so sharp) but this recipe, I am proud to say, worked!

She EVEN asked for “More mummy! More!”

Almond flour chocolate mini muffins

Ingredients

1 ¼ cup of almond flour

¼ cup of Nomu Skinny Hot Chocolate (the original recipe said cocoa but I didn’t have any)

¼ tsp. Baking Soda

2 medium eggs

2 Tablespoons of coconut oil (Original recipe said butter)

¼ cup pitted mejool dates (Original recipe said Agave Nectar which I wouldn’t even know where to buy)

½ tsp. Vanilla Extract

 

Directions

I literally just shoved all the ingredients into a Nutri Bullet blender (added some water because the mixture was too stiff, needed to be creamy and fluffy).

Scooped blended mixture into a Le Creuset mini muffin tray

Popped into oven at 170 degrees Celsius for 20/25 min

And voila out they came in perfect #BeanApproved condition xD
